Apple Walnut Salad

Before you think this “Apple Walnut Salad” has your traditional salad things such as greens… let me stop you right there.  Aaron created this and we refined it a couple of nights back.  We think you’ll love it as much as we do!

Apple Walnut Salad

For the dressing:
2 TBSP Balsamic Vinegar (NOT the vinaigrette, just the vinegar)
1 tsp Honey
1/2 tsp Kosher Salt
A few grinds of fresh pepper

For the salad:
2 Granny Smith Apples, sliced Julienne
1/2 cup walnuts, roughly chopped
1/2 cup crumbled feta cheese
1/4 cup raisins

Preparations:
For the dressing, place ingredients in a small bowl and whisk together until well blended.
For the salad, place ingredients in a medium bowl and mix thoroughly. Then, top with the dressing mixture and enjoy. Serves 3-4.

This salad is the perfect combination of tart and sweet from the apples and salty from the dressing and cheese.  It’s a beautiful balance and a unique way to get a serving of fruit along with some protein.  It compliments almost any meal well.  We have served it with spaghetti and Texas Toast, pork chops and smashed potatoes, chicken and rice, well, you get the idea…
