Mexican Caserole-ish Dish

Our dear friend, Amy Peterson, very recently posted this recipe for a quick and delicious meal the whole family will love!

1 – 8 oz tube Crescent Rolls

1 can Cheddar Cheese Soup

3-4 Chicken Breasts, poached and shredded

1 can Black Beans

1 cup Corn

4 oz Cream Cheese

1 cup Sour Cream

1 tsp Chili Powder

Shredded Cheddar Cheese as desired

Spray the bottom of a square cake pan. Unroll the crescent rolls and cover the bottom of a square cake pan with them. Bake these for about 8-9 minutes (should be fluffy but not totally cooked). While they are cooking, mix together the cooked chicken, cheese soup, black beans, corn, sour cream, cream cheese and chili powder. When the crescent rolls are done, put the chicken mixture over the top. Cover with as much shredded cheese as you like, and stick it in the oven for about 15 minutes.

Garnish with whatever you’re feeling like… crushed Doritos, lettuce, black olives, jalapenos, whatever!
